TAILGATING Great food for watching the Dawgs at home or on the road
There are no recipes for â€śGator Stewâ€ť but readers will find plenty of tasty ideas for tailgating in one of Starkvilleâ€™ most popular cookbooks.
Filled with recipes and historic tidbits from alumni and fans of the Mississippi State University Bulldogs, Bullyâ€™s Best Bites remains one of the best selling cookbooks in Starkville. Compiled by the Starkville Junior Auxiliary, proceeds from the cookbook goes to support a variety of local childrenâ€™s programs sponsored by the organization.
Whether watching the Bulldogs play on television this week, or traveling to Florida, the tailgating recipes are sure to put fans in the mood for football!
It is finally chili weather and the recipe from Keith and Carol Winfield of Starkville is a tasty treat to enjoy throughout the game.
2 pounds of ground meat
1 large onion
1 large clove of garlic
1 ounce cumin
2 ounces of chili powder
1 cup tomato sauce
1 cup water
2 teaspoons salt
1/2 cup flour and water to make paste
Brown meat lightly. Add onion and garlic. Cover and cook slowly for two hours. Stir occasionally and mash meat. Add cumin, chili powder, tomato sauce, water and salt. Cook one more hour. Stir small amount of water into 1/2 cup flour to make a paste. Add this to chili to thicken and simmer 20 more minutes. Note: 1 can of beans (Louisiana Red Beans add more spice) my be added if desired. If beans are added, you ill need to add a small can of crushed tomatoes.

1 1/2 cups buttermilk
2 or 3 chili peppers, chopped
1 10-ounce package frozen creamed corn, thawed
1/2 cup chopped onion
1 clove garlic, minced
4 ounces Cheddar cheese, shredded
2 cups self-rising corn meal
Mix all above ingredients together. In a black iron skillet, brown 2 to 3 tablespoons of butter. This may be done either on top of stove or in oven. Pour mixture into skillet and bake at 350 degrees for 45 minutes.
