New bakery opening in Maben

Cakes by Lacy, a new venture in the Town of Maben, will soon be open for business, maybe, by Thanksgiving holidays, according to the head baker-Lacy Simmons.
There is nothing like the pleasant aroma of a cake baking or one just out of the oven; today at Cakes by Lacy, one cake was ready to be decorated-just out of the oven and cooled.  
Lacy Simmons, owner-operator, said that she decided to take up the “cake business” by looking on-line at cakes and decided that she wanted to do that. Watching her mix food coloring gel with an icing recipe of powdered sugar, shortening, vanilla, and butter was like watching a scientist at work: add some gel and stir, let it rest, mix some more, and wait till it was the right color, then start designing the cake top —an artist at work.
 According to her husband Lamar, the step-and-fetch-it man who helps on his days off, Lacy is very creative and loves doing artistic cakes.
Customers will be able to bring in their requests and have them recreated in cake form.
Even though the store is not officially open, Cakes by Lacy is taking orders now, but will officially open in late November. Cakes by Lacy will be making cakes for Larry’s; if you want to buy one at Larry’s or at the shop, you may do so.
She says they have been inspected by the State Health Department and on November 11, they will be attending a Serve Safe Class in Tupelo to learn about safety in food service.
Lacy expressed that she was very affordable and to drop buy and see what she will have to offer.
Presently they are putting up shelves for the pan display and getting the place organized-but they are doing cakes now for the public, so come on by.
