We love pancakes.
It is not something we eat for breakfast during the week, but Saturday is pancake day. The husband likes to drown his pancakes with syrup; I like mine loaded with butter and light on syrup â€” everyone has their own flavor combinations. And at home we have to have Blackburn-made Syrup. We have experimented with other brands and flavors, but Blackburn is a tried and true favorite at the Sisson household.
Of course I guess for us any day could be pancake day at Traceway Restaurant or Starkville Cafe. I love the way the short stacks at both restaurants are crispy along the edges. Crispy and buttery make for a fantastic breakfast.
And what is better any time of the day or night than stuffed pancakes at Restaurant Tyler? I fell in love with Tyâ€™s dessert concoction on opening night. The maple syrup he uses smells fantastic and automatically puts you in pancake mode.
But I only make them at home on Saturdays. If not for breakfast, for supper. Breakfast for supper is a real treat.
I canâ€™t remember when I switched from Bisquick Mix pancakes to my own recipe.
It has been in the past 10 years and I can probably guess we were out of Bisquick, craving pancakes on a Saturday morning.
The first time we tried this recipe, we were hooked. If I remember correctly, the original recipe used buttermilk, but we use regular milk. Buttermilk is not something I typically keep in the pantry, but I bet it would be good. (My dad would drink buttermilk with crumbled cornbread for breakfast if my mom would let him.)
I love very thin pancakes and the husband likes his pancakes a little thicker. This makes thin pancakes, so I use a little less milk for heftier pancakes.
1 cup plain flour
1/3 tsp. salt
2 tsp. sugar
1 tbsp. brown sugar
3 tsp. baking powder
1 cup milk
2 tbsp. melted butter
Sift dry ingredients together. Beat eggs until fluffy; add dry ingredients and beat until almost smooth. Stir in milk and butter. Beat only until mixture is smooth and free of lumps.
